Movin’ on Up! Missoula Food Stand Upgrades to New Food Truck
We've seen a few stories like this happen with different businesses in Missoula. They start out small with a food stand and grow in popularity until the demand is big enough to allow them to jump to a bigger platform. And we recently saw a favorite local food truck realize they were busy enough to add a second truck to their operation. Well, it's happening again as a popular food stand is making the jump from stationary to mobile meals.
A story in the Missoulian says Aiko's Family-Inspired Japanese Fusion has made the jump to a food truck that will allow them to better serve customers around Missoula. Their website tells the backstory of the food stand that you might be familiar with from their time at the market.
Aiko’s is a family-inspired Japanese fusion food stand at the Clark Fork River Market established in 2021. The name comes from my grandmother, Aiko Tatsuhara. For a long time now, I’ve wanted to share my grandmother’s food – it’s food that has brought our family together for holidays, special events or just because!
If you're already a fan, the good news is Aiko's will still be found at the Clark Fork River Market on Saturdays. In addition to the market, you'll be able to find them at various places around town including Western Cider, Missoula Farmers Market, and Orchard Homes Farmers Market.
